The first blend from our solera of 100 spontaneously fermented ales started in early 2019. Brewed with Tasmanian grown, malted barley amp unmalted spelt, naturally soured by the microorganisms present on the raw spelt. Completed by the aromatic complexity of whole hop flowers from the Derwent Valley Ella, Willamette amp Galaxy. Expect lifted, complex aromatics amp superb texture with a long, dry, refreshingly acidic palate.
